The fruit for this Onannon Mornington Pinot Gris was hand-harvested and promptly pressed into a tank. After settling overnight, it was racked into a combination of tanks and old barrels. A slow, cool fermentation process spanned two months, during which the wine was regularly stirred to enhance its texture. This careful approach has produced a wine with enticing aromas of ripe pears and mixed stone fruits, accented by subtle notes of crisp green apple. The palate is rich and textured, culminating in a beautifully satisfying finish.
