Will Byron
Founder, winemaker & co-owner
Will Byron is the founder, winemaker and co-owner of Onannon, which he established in 2008 with Kaspar Hermann and Sam Middleton. He built his experience with Chardonnay and Pinot Noir at Coldstream Hills and Stonier, alongside harvests in Burgundy and Central Otago at Domaine David Duband, Domaine Blain-Gagnard and Maude.
In 2021, Will made Onannon his sole focus, working exclusively with fruit from the Mornington Peninsula. The introduction of single vineyard wines in 2023 brought a more detailed exploration into the sub regionality across all sites.
